The Journey

The whole run, south to north. A week of Tokyo — the Toyosu tuna auction before dawn, a circuit of coffee counters, a temple of a thousand cats in the rain — then a flight up to Sapporo and a van into the Furano snow to learn to ski. A trip about finding the fit — the cup, the plate, the turn — one careful adjustment at a time.

The Cup
Dialing in the palate
Coffee omakase, cupping flights, a hundred single-origin geishas across Tokyo and Sapporo. Every barista dialed straight into what I liked — plum, sakura, florals from raw cherry — and handed it back. Truly one to one.
The Counter
Better fit is better
Sushi Dai in the cold dawn, a three-star that was too much for one, a two-star that was perfect. The lesson kept repeating: more expensive isn't better. The right fit is.
The Fall
Learning to fall, then flow
North to Hokkaido and onto skis for the first time. Wedge, then weight transfer, then — on the third day — a whole blue run in one flowing go. Lean forward. Trust the turn.

Intimate, and honestly too romantic for one. The food was extraordinary — and the night taught the lesson the rest of the trip kept repeating: better fit is better. More expensive isn't always more.
