Four nights in the world's densest coffee city, walked from a lane-house base in the French Concession. A night in Suzhou for Pei's museum and the canals at dusk, three nights among the tea hills of Hangzhou, then three in Seoul for its roasters. Nonstop out and home, trains in between.

Every Shanghai stop is held to one benchmark: a Terraform pour-over. Ranked lists from Tencent News and the Chinese press were cross-checked against addresses and hours, and where a place couldn't be located, it says so. Check each on Dianping (大众点评) before going.
Terraform roasts on Loring machines and pours at Blacksheep. 124 S. Maoming Rd, daily 8:00–18:00; second bar at 169-4 Middle Jianguo Rd (to 16:00). Order the rotating Ethiopia or Kenya pour-over and a light espresso. The roastery is the one to see: 译豆咖啡 in the 79意库 park on Guanghua Rd, Zhuanqiao, Minhang, about 45–60 minutes by taxi. Roasting floor below, café and cupping space upstairs. Its door number and hours aren't published; ask at Blacksheep.
833 Kangding Rd, Jing'an. #2 on Tencent's 2025 top 20. Competition beans and named-estate lots; the single-origin espresso changes every two days. Its flat white is widely called the city's best. Expect a queue.
739 Liyang Rd, Hongkou. Weekdays 10:00–17:00, walk-in. Pour-over only, from ¥98, about 20 minutes per guest with custom glassware and water. The closest thing to Koffee Mameya in Shanghai.
98 Wukang Rd. 13:00–18:00, book a day ahead on WeChat (SLAYCOMPANY). Auction and competition lots from 20+ roasters worldwide, poured side by side.
27 Sinan Rd. 8:00–17:00, closed Tuesdays. #1 on Tencent's 2024 list; self-roasted, seven or eight beans on offer daily. Order pour-over.
#1 on Tencent's 2025 list. Shallow roasts; order the natural Kenya flat white. The only published location note is "beside an elevated highway".
12 S. Chongqing Rd. A Kenya specialist; order the Kenya espresso both light and dark. Closed Mondays. Sources disagree on hours (8:00–18:00 or 9:00–17:00).
1220 Middle Huaihai Rd. 8:00–18:00. Co-founded by China barista champion Pan Wei; competition beans and rare varieties. Source is from 2024, so confirm it's still open.
472 Yuyuan Rd. 12:00–18:00, closed Tuesdays. Consistent at 100+ cups a day; order the piccolo.
177 and 305 Taiyuan Rd. O.P.S. is standing room, daily 10:00–18:00, with about five seasonal composed drinks (lychee, tomato, herbs). The fusion stop.
48 Sinan Rd. 14:00–midnight, closed Mondays, reservation required, no sign outside. An award-winning barista's experimental bar; the one late-evening option. It sometimes closes without notice, so confirm the day before.
298 Julu Rd, Jing'an. #2 on Tencent's 2024 list; espresso only, about ten single-origin shots rotating.
1622 Beijing West Rd, Jing'an. Daily 8:30–18:30. #4 on Tencent's 2025 list; added after review, so taste and judge.
Also ranked, not yet walked: filternotes’ Shanghai must-visits Café del Volcán (Yongkang Rd) and Captain George Flavor Museum (Taiyuan Rd), and Sumerian (N. Shaanxi Rd), a World’s 100 Best nominee; hours: verify. At the bar but too far: aftertaste (Qiantan, Pudong) and Tic-Tac-Toe (Songjiang), #6 and #3 on the Penguin guide’s 2025 top 20. Didn't make the cut: Manner, Luckin, Seesaw, M Stand, % Arabica, Blue Bottle and the Starbucks Roastery (chains); Metal Hands (a filternotes must-visit, but drink-builds over coffee); Softfocus (#13 on Penguin, weekends only).

Seogyo/Hapjeong, 18 Jandari-ro 7an-gil. Weekdays 08–19, weekends 10–19. Numbered single origins, batch-brew taps, rare lots and Geishas; also pours beans from Boram Um, the 2023 World Barista Champion.
Magok, 42 Magokjungang 6-ro. Weekdays 09–17, weekends 11–17. On the airport line: the last cup before Incheon.
Yonggang, 12 Tojeong-ro 25-gil. Mon–Sat 12–18. Australian-Korean owner, Lost Origin microlots.
Daeheung, 14 Daeheung-ro 14-gil, ~100 m from John Small. 09–18 (weekends from 10).
Samseong, 15 Bongeunsa-ro 78-gil. Weekdays 08:30–17:30, Sat 12–18:30. Seasonal filter; supplies beans to other bars.
Myeong-dong, 31 Toegye-ro 20-gil. 11:30–18:30. The only Seoul shop on the World’s 100 Best 2026 list (#51): Panama Geishas in Riedel glasses.
Seongsan, 16 World Cup buk-ro 16-gil. Daily 10–18. A 2015 Korea roasting champion, third at the world championship that year.
Hongdae, basement of 11-1 Wausan-ro 29da-gil. 12–18. Five seats, single origins. A second shop, Tremor Coffee Commons, is in Nonhyeon.
Yeonnam, 40 Yeonnam-ro 11-gil. Tue–Sat 11–18. A hand-drip bar.
Seogyo, 139 Donggyo-ro. Mon–Sat 11–19:30. Two-sided tasting cups.
Hongdae, 20 Wausan-ro 29ba-gil. Weekdays 09–21. Second at the 2023 Korean roasting championship (verify).
Mangwon: two addresses, 11 Poeun-ro 6-gil and 117-1 Huijeong-ro (daily 10–17 listed for the second). Roasting since 2016.
Seongsu, 22-1 Yeonmujang 5ga-gil. About 11–21. One pour-over at a time, guest roasters.
Samseong, 41 Bongeunsa-ro 68-gil. Weekdays 08:30–20. Imports and roasts its own; every cup with an origin card.
Yangjae, 38 Gangnam-daero 30-gil. Mon–Sat 10–16. A Japanese-run roastery.
Hannam (Dokseodang-ro 14-gil, 08–21) and Yongsan (11–20:30). The salted oat cream espresso.
Seogyo, basement of 31 Yanghwa-ro 11-gil. Weekdays 07–18, Sun 09–18. The earliest door; listed as a bakery-café.
Daeheung, 15-1 Baekbeom-ro 16an-gil (moved from near Ewha in 2025). Tue–Sun 09–18. The cream cappuccino.
Seoul Forest, 43 Seoulsup-gil. Weekdays 08–17. A small roaster that local roasters recommend.
Yeonhui, 12 Yeonhui-ro 11ma-gil. 08–20. A neighborhood roastery.
Also well regarded: Coffee Hanyakbang (Euljiro, filternotes’ Seoul must-visit), Namusairo (Sajik-dong, light roasts since 2002), Center Coffee (Gwanghwamun, B1 136 Sejong-daero), Terarosa (Gwanghwamun), Coffee Libre (Yeonnam, closed Mon), Fritz (for the bread and the buildings), Anthracite. Not in Seoul: Momos is Busan only, and its CEO said in August 2026 that it will not open in Seoul. Not found: Sown (a roaster, no public café) and Goro (two shops share the name; unresolved).
Each day carries a locator map (tap to jump to the full map), its theme, and an energy read. A gold pill marks a clock someone else sets (a train, a timed museum slot, the garden’s opening, the booked guide); everything else is a suggested shape, not a schedule. Most museums close Mondays; Radar and Mia & Clément’s close Tuesdays. Sunset is about 17:15 in China and 17:40 in Seoul, so blue hour starts early. Each photo spot shows its local name, for a taxi or a local map (Amap in China, Naver or Kakao in Seoul): Google is blocked on local networks in China, so its directions links are for planning.

Nothing serious in coffee is open on a Monday night.

The morning is held for the Terraform roastery in Minhang, if it's open to visitors (cuppings upstairs over the Loring roasters; about 1.5–2 hours round trip). Otherwise 10:30 Radar on Sinan Rd, then D.ORINO in Jing'an. Liveliness, Mia & Clément's, Chillcoooool and LuckyDraw are spares.
The Bund's facades face east, so afternoon light on them is flat.
Its upper galleries frame the Bund across the river, backlit at this hour, so it reads as silhouette. Rockbund's next shows open Oct 31, so it's off.
Blue hour ends about now; after it the towers' own lights carry the frame. The Shanghai Tower deck (to 22:00) only with legs left.

If the roastery didn't happen Thursday and is open today: go first, then a train from Hongqiao, 25 minutes from Minhang. Otherwise a slow morning and a cup at Blacksheep on Jianguo Rd.

The one day when midday light is the point: Liangzhu wants it hard. Xiangshan wants it low.
